Peach Pancakes

 

 

INGREDIENTS

  • All-purpose Flour - 1 1/2 cups
  • Baking Powder - 1 tbsp
  • Salt - 1/2 tsp
  • Cinnamon - 1/2 tsp (optional)
  • Cane Sugar or Agave Syrup - 1 tbsp
  • Peach Jam
  • Almond Milk - 1 cup
  • Vanilla - 1 tsp

 * can substitute diced fresh peaches for jam if you don't have a batch on hand.


INSTRUCTIONS

  • Preheat a pan on the stove over medium heat
  • Combine all dry ingredients in a large bowl. sit or whisk ingredients to combine
  • In a medium bowl, mix together all wet ingredients
  • Make a well in the dry ingredients, pour in wet, and mix until just combined (don't over mix the batter!)
  • Pour about 1/2 cup of the batter onto the pan. When bubbles form on top, flip the pancakes. 
  • When done, top with maple syrup, chopped nuts, peaches (or other fruit)...whatever tickles your fancy.
  • Enjoy!
