Crispy Roasted Brussels Sprouts (Balsamic Maple Glaze)

 

 

If Brussels sprouts scarred you at a childhood dinner table, this recipe is here to make amends. Tossed in olive oil, roasted hot and fast until the outer leaves turn shatter-crispy, then finished with a sticky-sweet balsamic maple glaze, these little cabbages go from "eat your vegetables" to "can I have the whole pan." It's a 10-minute-prep, 5-ingredient side dish that works for a Tuesday dinner or a holiday table, and it's proof that plant-based cooking doesn't have to mean bland. Ingredients

  • 1 ½ lbs Brussels sprouts, trimmed and halved (quartered if large)
  • 3 tablespoons olive oil
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon black pepper
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 2 cloves garlic, minced
  • Optional finishing touches: flaky salt, red pepper flakes, toasted pecans, or a squeeze of lemon

Instructions

  1. Preheat and prep. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment if you like easy cleanup, just don't crowd the sprouts, or they'll steam instead of crisp.
  2. Season the sprouts. In a large bowl, toss the halved Brussels sprouts with the olive oil, salt, and pepper until every cut face is coated.
  3. Arrange cut-side down. Spread the sprouts in a single layer on the baking sheet, flat side facing down. This is the move that gets you deep golden-brown, caramelized edges instead of soggy ones.
  4. Roast, undisturbed. Roast for 20–25 minutes, resisting the urge to stir. You want those cut sides to sear against the hot pan. They're done when the outer leaves are crispy and deeply browned and a fork slides easily into the core.
  5. Make the glaze. While the sprouts roast, combine the balsamic vinegar, maple syrup, and minced garlic in a small saucepan over medium heat. Simmer for 3–4 minutes, stirring occasionally, until slightly thickened and syrupy. Watch it closely near the end as it can go from glossy to burnt fast.
  6. Glaze and serve. Transfer the roasted sprouts to a serving bowl, drizzle with the warm balsamic glaze, and toss to coat. Finish with flaky salt, a pinch of red pepper flakes, or toasted pecans if you're feeling fancy. Serve immediately, while they're still crackly.

 

Notes & Swaps

  • No balsamic on hand? A squeeze of fresh lemon and a drizzle of maple syrup gets you 80% of the way there.
  • Want more crunch? Toss in toasted walnuts or pecans during the last 5 minutes of roasting.
  • Meal-prepping? Roast plain (skip the glaze) and store in the fridge for up to 4 days; reheat in a hot skillet or air fryer to bring back the crisp, then glaze fresh.
  • Air fryer version: Cook at 375°F for 12–15 minutes, shaking the basket halfway through.
  • Make it a meal: Toss the finished sprouts with cooked quinoa or farro and a handful of white beans for a hearty plant-based bowl.

 

Why This Recipe Works

Cutting the sprouts in half (not quartering, unless they're huge) gives you maximum flat surface area for browning. That's where all the flavor lives. Roasting cut-side down and giving them room on the pan means moisture escapes instead of pooling, so you get crisp instead of steamed.
