Crispy Garlic & Herb Roasted Carrot Fries

Move over, potato fries! These garlicky, herb-roasted carrot fries are the snack (or side) that makes plant-based eating feel like zero sacrifice. Cut into sticks, tossed with garlic and fresh rosemary and thyme, and roasted hot enough to get real crispy, caramelized edges, they're so good dunked in a creamy garlic-herb dip. Pile them into a mug or a cup lined with a napkin for that straight-from-the-food-truck feel, and watch them disappear.

Ingredients

For the carrot fries

  • 2 lbs carrots, peeled and cut into fry-shaped sticks (about ¼–inch thick)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 sprigs fresh rosemary, leaves stripped and chopped (plus extra sprigs for garnish)
  • 2 sprigs fresh thyme, leaves stripped (plus extra sprigs for garnish)
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper

For the garlic-herb dip

  • 1 cup plain unsweetened vegan yogurt (coconut or cashew-based works well)
  • 1 small clove garlic, grated or minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh chopped herbs (dill, parsley, or a mix)
  • Salt and pepper, to taste

 

Instructions

  1. Preheat the oven to 425°F (220°C) and line a large rimmed baking sheet with parchment for easy cleanup.
  2. Cut the carrots into fries. Trim the ends, then slice each carrot lengthwise into planks and cut the planks into ¼-inch sticks, aiming for even thickness so they cook at the same rate.
  3. Toss. In a large bowl, toss the carrot fries with olive oil, minced garlic, chopped rosemary, thyme, salt, and pepper until evenly coated.
  4. Spread in a single layer on the baking sheet, leaving space between the fries — crowding the pan steams them instead of crisping them.
  5. Roast for 25–30 minutes, flipping halfway through, until deeply golden and charred at the edges and tender when pierced with a fork.
  6. Make the dip while the fries roast: whisk together the vegan yogurt, garlic, lemon juice, and fresh herbs. Season to taste and refrigerate until ready to serve.
  7. Serve warm. Pile the fries into a mug or small cup lined with a napkin for easy snacking, garnish with a few fresh rosemary and thyme sprigs, and set out the garlic-herb dip alongside for dipping.

 

Notes & Swaps

  • Cutting tip: Thinner fries crisp up faster and get more of that caramelized edge. Go thinner if you like extra crunch.
  • No fresh herbs? Use 1 teaspoon dried rosemary and ½ teaspoon dried thyme in the fries; fresh is best for the dip and garnish.
  • Dairy-free dip swap: Store-bought vegan sour cream or a tahini-lemon sauce both work in place of the yogurt dip.
  • Storage: Leftover fries keep in the fridge for up to 3 days, but they're best reheated in a hot oven or air fryer to bring the crisp back...the microwave will make them soft.
