Vegan Cheddar Cheese Sauce

I'm about to share with you one of my favorite vegan cheese sauce recipes. It's so good, you'll forget all about the dairy version. I promise! This cheesy goodness is perfect for drizzling over your favorite vegetables, smothering over a plate of nachos, or serving as a dip at your next party. Plus, it's really easy to make - just a few simple ingredients and you'll have a cheesy masterpiece on your hands! So, gather up your ingredients and let's get cookin'!

 

INGREDIENTS

  • Potatoes - 2 cups chopped
  • Carrots - 1 cup chopped
  • Olive Oil - ⅓ cup
  • Tamari or Soy Sauce - 1 tbsp
  • Nutritional Yeast - ½ cup
  • 1 1/2 tbsp fresh lemon juice
  • Salt - 1½ tsp
  • Onion Powder - 1 tsp
  • Garlic Powder - 1 tsp
  • 1 can of hot Rotel, drained (optional)

 

INSTRUCTIONS

  • Steam (preferred) or boil potatoes and carrots until soft.
  • Put all ingredients into a blender and blend until smooth.  If not using a high speed blender, you may need to add a small amount of water to help with the blending.
  • Pour into a bowl and if using Rotel, fold that into the cheese. 
  • Enjoy over nacho chips or as you would with any other cheese sauce.
