Tofu Veggie Scramble

 

 

INGREDIENTS

  • 1 15 oz package of extra firm tofu (firm will work also)
  • 1 onion, chopped
  • 1 cup of kale or other preferred green
  • 1 cup grape tomatoes, halved
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 1 tsp turmeric
  • 1 tsp onion powder
  • 1 tsp garlic powder 
  • 1 tsp olive oil

INSTRUCTIONS

  • Slice tofu brick into 5 sections.  Place between paper towels to drain excess liquid
  • Heat large pan on medium heat, and add olive oil.
    Add onion and tomatoes and saute for 5 minutes or until onion is soft.
    Add kale and mix, cook for another minute.
  • Crumble tofu into pan.  Add salt, pepper, turmeric, onion powder, garlic powder.
    Mix until combined with other ingredients.
  • Cook until heated through, about 10 minutes.
  • Enjoy!
