Pumpkin Pie Truffles

 

 

 

INGREDIENTS

  • 1/2 cup Pumpkin Puree
  • 6 Medjool Dates, pitted
  • 1 tsp Pumpkin Spice
  • 1/2 cup Oat Flour
  • Graham Crackers (vegan), crushed

 

 INSTRUCTIONS

  • Soak dates in water for at least an hour
  • Crush graham crackers in food processor and set aside 
  • Add dates to food processor and process until broken up
  • Add the oats flour, pumpkin puree, pumpkin spice, to a food processor and blend until everything is totally mixed together. 
  • Use 1 tablespoon of dough for each truffle and roll into a ball. Place on baking sheet and place in freezer for 20 minutes.
  • Roll each truffle in the graham cracker crumbs to fully coat
  • Store the truffles in the fridge or freezer.
