Peach Gazpacho

 

 

INGREDIENTS

  • Peaches - 6, peeled and cored
  • Cucumber - 1, diced
  • Jalapeno - 1, diced
  • Ginger, ground - 1/2 tsp
  • Red Bell Pepper - 1, diced
  • Basil - 2 tbsp, chopped
  • White Wine Vinegar - 1 tbsp
  • Olive Oil - 1tbsp
  • Water - 1/2 cup
  • Salt & Pepper - to taste

 *hold a little of each veggie for garnish

 


INSTRUCTIONS

 

  • In a food processor (or blender), add peaches, ginger, white wine vinegar, olive oil, water. Blend until smooth.
  • Pour 3/4 of the pureed peach into a large bowl. Leave rest in food processor. 
  • Add the jalapeno, pepper, cucumber, to food processor. Pulse until just combined. Pour into large bowl with rest of peach mixture. 
  • Refrigerate for at least 1 hour before serving. Garnish with left over diced veggies.
  • Enjoy!
