Vegan Peach Crisp

 

 

INGREDIENTS

 

Topping

  • Flour - 1 cup
  • Pure Cane Sugar - 1 Cup
  • Cinnamon - 1/2 tsp
  • Rolled Oats - 1 cup
  • Earth Balance or other vegan buttery spread- 1/2 cup

 

Filling

  • Peaches - 8
  • Fresh Lemon Juice - 1 tbsp
  • Brown Sugar - 1 cup
  • Cinnamon - 2 tsp
  • Salt - 1/4 tsp


INSTRUCTIONS

 

Cashew Sour Cream

  • Preheat oven to 350 degrees F
  • Peel, core and slice peaches. Add to bowl.
  • Fold rest of filling ingredients into bowl and mix with peaches until combined. Add to a greased (with Earth Balance/sprayed) 3Qt baking dish
  • In a separate bowl, whisk together the topping ingredients except for Earth Balance
  • In a food processor or by hand, pulse/cut butter in with topping ingredients. Mix until crumbly.
  • Spread topping over peach filling
  • Bake in oven for 35-40 minutes
  • Serve warm, top with vegan whipped cream, ice cream, chopped nuts.
  • Enjoy!
