Chickpea Flour Omelette
INGREDIENTS
- Chickpea flour omelette mix. (see recipe below) - 1/4 cup
- Water - 1/4 cup
- Veggies ex. onion, kale, collard greens, spinach, peppers, broccoli, tomato, etc.. (pictured: kale, onion, red peppers)
- Vegan cheese is optional. (Pictured: Daiya mozz. shreds)
Chickpea Flour Mix
2 cups chickpea/garbanzo flour, 3 tbsp ground flax seed, 1 tsp baking powder, 1 tsp garlic powder, 2 tsp onion powder, 1 tsp turmeric, 1 tsp salt, 1 tsp black salt, 1 tsp thyme
INSTRUCTIONS
- In a bowl, add the chickpea omelette mix with the water and whisk until fully combined. Let sit for a couple minutes.
- Heat pan on medium heat. Add olive oil or spray pan. Add liquid mixture and cover with lid.
- When bottom of omelette is slightly browning, flip over. Add veggies and vegan cheese. Cover with lid again.
- When vegan cheese is melted and bottom of omelette is slightly brown, slide onto plate as-is or fold in half.
- Enjoy!
