Buffalo Cauliflower Bites

 

 

 

INGREDIENTS

  •  Cauliflower - 1 head

  

Batter

  •  Flour - 1 cup
  • Cornstarch - 1 tsp (optional)
  • Garlic Powder - 1 tsp
  • Onion Powder - 1 tsp
  • Buffalo Sauce - 1 1/2 tbsp
  • Salt - 1/2 tsp
  • Pepper - 1/4 tsp
  • Almond Milk or other non-dairy milk - 1 1/2 cups

 

 Buffalo Sauce

  •  Franks Red Hot Sauce or Texas Pete - 1 cup
  • Earth Balance (buttery spread) - 1 cup

 

 INSTRUCTIONS

 

  • Pre-heat oven to 425 degrees F
  • Line a baking tray with parchment paper

 

Buffalo Sauce

  •  In a small bowl, whisk together hot sauce and melted Earth Balance

 

Batter

  •  In a large bowl, whisk together all dry ingredients and create well in center
  • In a small bowl, whisk together all wet ingredients
  • Add wet ingredients to dry ingredient bowl and stir until combined

 

Pulling It All Together

  •  Dip the cauliflower florets in the batter, make sure completely coated
  • Shake off excess batter and place on baking tray
  • Place battered cauliflower in oven and bake for 12-15 minutes
  • After baking is complete, put cauliflower bites in a large bowl
  • Add buffalo sauce gradually over the cauliflower bites.
  • Pour enough buffalo sauce to coat the bites but not saturate them so they lose crispness
  • Serve immediately
